
Mezan sources its rums from single distilleries in the Caribbean. This rum hails from Diamond Distillery in Guyana, who cultivate their own yeast strain and employ a range of stills. In this case, the molasses-based distillate from estate-grown cane passed through a double wooden pot-still. It was aged in ex-bourbon casks.
Nose: Green banana, buttery oak and caraway. A burst of zesty lime and lemon arrives later on.
Palate: Crisp apple, more citrus, some star anise and a hint of beeswax.
Finish: Soft woody spices and another hint of juicy fruit.
