The Cristina Medium from González Byass is a wonderful, velvety sherry from the Spanish DO Jerez wine region, vinified from Palomino Fino (87%) and Pedro Ximenez (13%) grape varieties.
In the glass, this sherry shines in a warm amber color with golden highlights. The intense and aromatic bouquet reveals intense notes of spices, dried figs and raisins, as well as subtle nuances of oak wort. On the palate, this sherry is velvety soft and full-bodied with a fine and fruity sweetness. The long reverberation is extremely aromatic.
The grapes are harvested separately and fermented separately in stainless steel tanks. The subsequent 6-year maturity in the Soleras is also carried out separately. Only after this ripening period will the two grape varieties be married to each other and placed in the Christina-Solera for another 2 years. After a total of 8 years of maturity, this wonderful sherry is filled onto the bottle. Only 600 litres of American oak barrels are used.
